Make an Old Fashion Meal with this Recipe for Potatoes Au Gratin with Spam

Spam, the go to standby in the “good old days”.  I remember my family buying a can or two of Spam every week.  My dad worked in a General Motors factor and carried one of the old black lunchboxes everyday.  Many days that lunchbox contained Spam sandwiches.  We also ate it fried for family meals.  As most of you know I live in North Texas now, right in the heart of the Dallas/Ft. Worth metroplex.  The Texas State Fair is held in Dallas every year.  One of the annual rituals of that fair is the Spam Cooking Contest.  I have never made it to the competition and/or judging, but I have seen many of the products on the TV news.  It can get pretty funny!  A lot of those, I wouldn’t want to try.  But here is an old fashion recipe to bring Spam back into your life–and we aren’t talking computer email spam!  Try this old fashion recipe combining Spam and AuGratin Potatoes and see where the memories take you!

Potato AuGratin with Spam

This recipe is from an old church cookbook.

6 to 8 large potatoes
1 can Spam
3/4 tall can evaporated milk
1 stick butter, cut into pieces
1 large onion
1 pint sour cream
2 large pkg. shredded cheddar cheese

Chop the potatoes, onion, and Spam into fine pieces. (Use a food processor, if you have one.) Add the sour cream, milk, 1 package of the cheese, and the butter. Mix the ingredients together. Pour the mixture into a greased 9×13-inch baking pan. Sprinkle the second package of cheese over the top of the mixture. Bake in a preheated 350 degree oven for approximately 1 1/2 hours.
